Chocolate Cake Recipe – Use Coffee!


2 cups caster sugar

1 3/4 cups plain flour

3/4 cup unsweetened cocoa powder

2 tbs baking soda

1 tsp baking powder

pinch salt

2 free range eggs

1 cup buttermilk

1 cup strong black coffee (we recommend our Colombian single origin)

1/2 cup vegetable oil

2 tsp vanila extract



Heat oven to 180 degrees Celsius, grease and flour two 9 inch round baking pans and set aside

Whist together all the dry ingredients.  Add eggs, buttermilk, coffee, oil and vanilla.

Beat on medium speed for about two minutes to make a thin batter.

Pour batter evenly into prepared tins.

Bake in pre-heated oven about 30 to 35 minutes or until skewer comes out clean.

Cool 10 minutes, remove cakes and put onto wire racks to cool completely.

Ice as desired.   Enjoy with a Nessun Dorma Coffee!
